Quick + easy Disney cupcakes
You should know by now that we are all about simple recipes…especially if they are snacks.
Today’s recipe happens to be our favorite Disney cupcakes because they are so simple. You make chocolate cupcakes, then you put frosting on top and Oreos on the ears. Looks like Mickey Mouse! The recipe is fun and delicious!
To make it easier, I used Betty Crocker’s black and white cupcake mix-I used two of them to make 2 dozen cupcakes.
How to make Mickey cupcakes
You can make homemade chocolate cakes or even homemade vanilla butter frosting, but you can use boxed and canned frosting to make things easier.
Whichever method you use, if you use the canned version, we recommend that you add some powdered sugar to the frosting to make it harder for use on cupcakes. Just add the icing sugar to the piping bag (I used 1M Wilton Tips). Add some icing sugar in the middle and around the pipe, starting from the edges and ending at the top of the initial clump.
Then, add Oreos to either side. It’s simple!
Storage skills
Want to make these in advance? no problem! If it is not frosted, store it in an airtight container at room temperature for 2-3 days, or store it in the refrigerator for up to 3 months.
The icing can be stored separately in the refrigerator for 3-4 days, or in the refrigerator for up to 3 months (in a sealed, freezer-safe container). When ready, thaw and beat well before frosting the cupcakes.
Oreos should be stored in a carton until they can be used.
