Easy Hawaiian Haystack Recipe + video

This is the ultimate weekend dinner option. It’s fast, easy, and customizable! Plus, you can’t go wrong with chicken and rice. We also love cheesy chicken and rice, or chicken and rice soup for weeknight dinners.
Not actually Hawaiian…
Interestingly, this recipe is not actually from Hawaii. But it took on that name because it had some “Hawaiian” inspired ingredients like coconut and pineapple.
The “haystack” part of the name is because you pile all the ingredients on top of the chicken and rice, and it kind of looks like a haystack.
This dinner recipe has arrived, especially when I need something quick and easy on a weeknight in a pinch that will satisfy even my picky eater! I’m sure we can all use another easy dinner recipe to add to our meal rotation and these haystacks are perfect.
I love that Hawaiian haystacks can serve a great deal for a party or church event! The rice is not difficult to make a lot, the chicken and gravy are easy, and the toppings are easy too!
Plus, people can choose the toppings they want, so it’s basically impossible for them not to like it. đ
How to Make a Hawaiian Haystack
The most laborious part of this recipe is making the gravy, and now let me tell you…it’s not even that hard. You can easily make it in a crock pot or skillet. It doesn’t take long, even in a crockpot.
Cylinder. Pour the soup and chicken stock into the crock pot and stir to combine. Add the sour cream, chicken nuggets (I use this roast chicken or leftover from the rotisserie), toss. Let’s sit in the crockpot for 30 minutes.
pan. In a large saucepan, combine the soup and broth. Add the sour cream and chicken and heat over medium heat, stirring occasionally. Once it’s warmed up (10 minutes or so), it’s ready to serve on the rice!

- 1 can Butter Chicken
- 1 can chicken stock
- 1/2 cup sour cream
- 2-3 chicken breasts cooked and diced
- Appropriate amount of pepper
- 3-4 cups steamed rice
- Garnishes: sliced ââalmonds, green onions, pineapple crumbles, fried wonton strips

Combine soup, broth, and sour cream in a crock pot to make gravy. Stir to combine.

Add chicken nuggets and pepper and stir. Put in crock pot for 30 minutes.

While the gravy and chicken are in the slow cooker, make wonton strips by cutting the wonton wrappers into strips and frying until golden brown.

Serve over rice. Top with sliced ââalmonds, scallions, fried wonton strips, and any other desired garnishes.
