Cheesy and delicious cauliflower soup. One of our favorite soup recipes to enjoy year round! Toppings include cauliflower, potato chips, cream cheese, cheddar cheese and bacon!

There are a few soup recipes that remind me of my childhood, one is the one I’m sharing today – cauliflower soup (along with other favorites like cheesy potato soup and taco soup). I wasn’t always a fan of cauliflower, especially as a kid, but surprisingly loved this soup. In fact, I’ve been craving this recipe for a while because it’s so easy, flavorful and smooth. One of the main reasons I learned to love this recipe is because I realized that cauliflower doesn’t have much flavor, but it tasted absolutely delicious in this recipe (it’s very similar to broccoli).

My mom would make this creamy cauliflower soup all the time and it’s a favorite of all of our kids, even if some of us are pickier than others and eat around cauliflower chunks. My mom first got this recipe from a family friend at church and has been making it for years. It calls for dried beef, an ingredient I rarely have (in fact, I never bought it before making this recipe). Instead of dried beef, you can omit it or use bacon instead. I usually use bacon because I always have it on hand.

How to Make Cauliflower Soup

This cheesy cauliflower soup recipe is easy! We haven’t tried it in the slow cooker but thought it would be just as easy. It really only takes a few minutes to prepare…you’ll need these cauliflower soup ingredients:

  • water
  • cauliflower
  • potato chips
  • Cream of Mushroom Soup
  • cream cheese
  • dried beef or bacon
  • cheese

To make this soup, first place the cauliflower cubes in a pot of water and bring to a boil. Reduce heat to low, add remaining ingredients (minus cheese) and simmer for 15-20 minutes.

Once cooked, you can enjoy it hot:

  • extra bacon
  • grated cheese
  • green onion/leek
  • coriander
  • croutons

How do you thicken cauliflower soup? Add flour, cornstarch, or other thickeners to thicken the soup.

Can you reheat cauliflower soup? Of course! Store soup in an airtight container for up to 3 days. Reheat, add to pot and bring to a simmer. Add milk or chicken broth to thin a bit and stir until heated through.

Can you freeze cauliflower soup? Yes, but we definitely recommend eating this fresh! To freeze, allow to cool completely and place in a freezer-safe container or airtight bag. To reheat, thaw in the refrigerator and follow our reheating instructions.

  • 4 degrees Celsius water
  • 1 head cauliflower, washed and diced (cut into small pieces if desired)
  • 1/2 c potato chips
  • 1 can Cream of Mushroom Soup or Cream of Potato Soup
  • 8 ounces cream cheese
  • 6-8 slices cooked bacon or 1 can dried beef
  • cheddar cheese
  • Put the cauliflower chunks in 4 cups of water. Bring to a boil.

  • Reduce to low and mix remaining ingredients. Simmer for 15-20 minutes.

  • Serve hot and sprinkle cheese on top. Please enjoy!
