A casserole version of a classic breakfast dish! ! This cookie and gravy casserole is super easy and perfect for weekend mornings and the holidays – especially if you’re feeding a large crowd!

No one can say no to this casserole version of biscuits and gravy. It’s delicious and has become a favorite breakfast casserole, like our Potato Breakfast Casserole and Sausage Breakfast Casserole.

Biscuits and Gravy Bake

Our family has been making biscuits and gravy for as long as I can remember. This is one of our classic breakfast recipes and one we make every year for our annual White Elephant Exchange.

We recently came across a biscuit and gravy casserole recipe (from Jamie Cooks it Up) that we were eager to try. So glad we did because it was awesome!

This recipe is full of flavor and easy to put together. We love that it’s so easy and can be enjoyed for breakfast, brunch or even brina (breakfast for dinner).

How to Make Biscuit and Gravy Casserole

Cut each cookie into four pieces and spread the halves evenly in a greased 9Ă—13 pan. Bake at 400 degrees for 10 minutes.

Meanwhile, brown the sausage in a frying pan. Combine dry ingredients, add brown sausage and mix well.

Add the remaining wet ingredients and mix until everything is combined and the mixture thickens.

Pour the sausage gravy over the partially baked biscuits, spread the remaining biscuits over the gravy, and bake for an additional 15-20 minutes, until the biscuits are golden brown. Brush the softened butter on the cookies and serve immediately!

Can this be made ahead of time? Yes. You can make it the night before or in the morning, but make sure to store it properly. Cover tightly with aluminum foil in the refrigerator until ready to bake.

  • 32 oz Pillsbury Grand Flaky Layer Cookies (two 16 oz tins)
  • 1 pound sausage
  • 4 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 1/2 cups milk
  • 21 oz cream of mushroom soup (two 10.5 oz cans)
  • 1/2 teaspoon Worcestershire sauce
  • softened butter
  • Remove cookies from tin and cut each into four pieces.

  • Spread half of the cookie pieces evenly on the bottom of a sprayed 9×13 pan. (Be sure to use a deep pan or a pan larger than 9×13).

  • Bake at 400 degrees for 10 minutes.

  • While cookies bake, place 1 lb of sausage in a skillet over medium-high heat.

  • Combine flour, salt, pepper and garlic powder in a small bowl. Add the brown sausage and toss to combine. Pour the milk into the pot and stir to thicken and foam the mixture, about 5 minutes. Add 2 cans of cream of mushroom soup (undiluted) and Worcestershire sauce. Stir to combine and allow to heat.

  • Carefully pour sausage gravy over partially baked crackers.

  • Spread remaining biscuit cubes over gravy.

  • Bake at 450 degrees for 15-20 minutes, until cookies are golden brown.

  • Brush tops of cookies with softened butter.
