Banana Bread Muffins

Banana bread is one of my all-time favorite snacks. Sometimes I like to make banana muffins instead of banana bread! They’re easier to make if you’re trying to feed a group or have a takeaway snack. Banana Bread Muffins are perfect for putting into school lunches or taking a pair for breakfast on the way out to work (along with our Lemon Poppy Seed Muffins and Blueberry Muffins).

Today’s muffins are as easy to make as banana bread – if not easier! You just need a muffin tin instead of a loaf pan. Cooking times vary slightly, so be sure to pay attention to the oven temperature and how long it takes to cook the muffins.

How to Make Banana Muffins

banana. Make sure you have three large bananas that are very ripe. They need to be almost black on the outside. The more ripe the bananas, the better the banana muffins will taste! Remove the banana peel and transfer to a bowl. Mash it with a potato masher or two forks! Mash the bananas so they are easier to mix into the muffin batter.

dry ingredients. Start by mixing your dry ingredients – flour, baking powder, baking soda and salt in a bowl.

wet ingredients. In another bowl, combine your bananas, eggs, sugar and melted butter. Add dry ingredients and mix until batter is smooth.

ingredients. In a separate small bowl, combine cinnamon and sugar. After pouring the batter into a greased muffin tin (or use cupcake liners!), sprinkle each muffin cup with the cinnamon and sugar mixture.

bake. Bake in oven at 350 degrees for 25-30 minutes. If you want to make mini muffins, bake for 10-15 minutes.

Banana Chocolate Muffins

Want to make these muffins even more delicious? ? Try tossing a cup of chocolate chips into the batter!

Chocolate Chip. Sometimes the chocolate chips will sink to the bottom of the batter. To make sure this doesn’t happen, lightly flour the chocolate chips before adding them to the batter. Make sure to add the chocolate chips last. Any chocolate chip will do – milk, semisweet, dark. You can even make mini chocolate chips.

toppings. If you prefer plain banana muffins, leave out the cinnamon and sugar mixture. You can also add chopped walnuts to the batter to make these Banana Nut Muffins (a muffin version of our Banana Nut Bread). Or make our Banana Muffins with delicious powdered sugar. Really tasty!
