  • 1 head cauliflower, chopped
  • 1 tablespoon of coconut oil, or cooking oil preferred
  • ÂĽ cup coconut milk (60 ml)
  • 1 tablespoon lime juice
  • 1 lime, peeled
  • Fresh coriander, for garnish

Prepare

  1. In a food processor, stir the cauliflower until it reaches the “rice” consistency you want.
  2. In a large saucepan, heat oil over medium heat, then add cauliflower rice and cook for 5 minutes. Stir occasionally.
  3. Add coconut milk, lime juice and lime zest, mix well and cook until the liquid evaporates.
  4. Garnish with coriander.
