Coconut Cauliflower Rice

- 1 head cauliflower, chopped
- 1 tablespoon of coconut oil, or cooking oil preferred
- ÂĽ cup coconut milk (60 ml)
- 1 tablespoon lime juice
- 1 lime, peeled
- Fresh coriander, for garnish

Prepare
- In a food processor, stir the cauliflower until it reaches the “rice” consistency you want.
- In a large saucepan, heat oil over medium heat, then add cauliflower rice and cook for 5 minutes. Stir occasionally.
- Add coconut milk, lime juice and lime zest, mix well and cook until the liquid evaporates.
- Garnish with coriander.
