Chocolate Strawberry Cake Valentine’s Day Gift!

Is there a better way to eat strawberries than wrapped in chocolate? I don’t think so! Embarrassing to admit, but 90% of the strawberries I eat are chocolate, whipped cream, or both! These Chocolate Strawberry Cakes are another way for me to eat more strawberries…and chocolate.
These cupcakes are divine! I use my chocolate cake recipe as a base. It’s moist, chocolatey, and super easy. No need for a mixer!
make cupcakes
Prepare. Preheat oven to 350 degrees Fahrenheit. Line muffin tins with 15 cupcake liners.
dry ingredients. Combine flour, sugar, baking soda, and salt and set aside.
wet ingredients. Put the butter, chocolate, and cocoa powder together in a bowl, then pour boiling water over it. Cover with plastic wrap and let stand for two minutes. Whisk until smooth, then add buttermilk, sour cream, eggs and vanilla. Whisk liquid ingredients until dry and smooth.
bake. Pour ÂĽ cup batter into each paper liner. Bake for 15-18 minutes or until toothpick comes out clean. Place cupcakes in tin for 5 minutes, then remove to cooling rack.

I like to use Dutch Craft Cocoa Powder Really rich chocolate flavor.
The Secret to Strawberry Frosting
berry. Place the freeze-dried berries in a blender and grind to a fine powder. Sift into a bowl to remove unmixed chunks.
frost. In an electric mixer beat butter, cream cheese and strawberry powder until smooth. Add powdered sugar a little at a time. Add vanilla, then milk 1 teaspoon at a time until desired consistency is reached.
notes: The key ingredient is freeze-dried strawberries. You can find them at Trader Joe’s or Amazon, and they’re usually stored in pouches in the produce section. You can sometimes find them near raisins or dried fruit. Freeze-dried strawberries allow you to add a lot of flavor without diluting and naturally develop deeper color.
Perfect Chocolate Strawberry
Ganache. Put the chocolate in a bowl and pour the hot whipped cream over it. Cover and let stand for two minutes, then whisk until smooth. Let the ganache cool for about 5 minutes before dipping in the strawberries.
Assembly and service. After the cupcakes have cooled, pipe the frosting. Dip strawberries into ganache and press into frosted cupcakes immediately. Serve within 2 hours or store in refrigerator. Allow to serve at room temperature.
notes: I really love using ganache on cupcakes, cakes, cheesecakes. It adds beauty and who doesn’t love more chocolate? ! The great thing about ganache is that it holds its shape but doesn’t get hard. This is great for covering strawberries. Follow our Chocolate Strawberry Tutorial here! Both cupcakes and frosting will work Made up to 2 days in advance. Strawberries can be made a day ahead. All ingredients should be stored individually in airtight containers in the refrigerator.when you are ready gather They let the frosting come to room temperature, piped it onto the cupcakes, and topped with chocolate-covered strawberries.
arrive shop For cupcakes, remove the strawberries from the remaining cupcakes and store them in a separate container in the refrigerator. Strawberries will last for 2-3 days.
shop This Frosted Cupcakes in separate airtight containers. They will keep for 2-3 days on the counter or 4-5 days in the refrigerator. When you’re ready to eat one, just place the strawberries on top of the cupcakes and enjoy!
I do not recommend freezing Chocolate covers the strawberries because when they thaw, the strawberries become mushy.However, you can freeze Store cupcakes and frosting in separate containers in the refrigerator for up to 3 months.
