This chocolate cupcake is a quick, easy and delicious treat for one person (or two if you want to share). Ready in less than five minutes, this cupcake is the perfect treat to satisfy your sweet tooth!
When those cravings hit and you need something sweet ASAP, it’s great to have a recipe like this cupcake on hand! This is ready in less than 10 minutes, just like our No Bake Cookies and Homemade Reese.
Satisfy your sweet tooth
You see, I love food (I’m a food blogger, right?!) and I especially love sweets. Of course, I want to enjoy all the delicious dessert recipes and satisfy my sweet tooth without feeling guilty about all the calories.
I’ve always believed in making better lifestyle choices rather than relying on fad diets and fad meal plans. I have to be realistic and not deprive me of my favorite thing (aka sugar), which is why I use SPLENDA® Naturals Stevia Sweetener so often.
SPLENDA® Naturals is a 100% natural sweetener made from stevia leaf extract, the most delicious stevia I have ever tried. We’ve been using it in our smoothies for the past four months or so and love the sweetness it brings without any bitter aftertaste.
SPLENDA® Naturals uses Reb D, the naturally sweeter part of Stevia leaves. Other stevia sweeteners use Reb A, which is the source of the bitter aftertaste.
I want to try it in more recipes and recently made a brownie with SPLENDA® Naturals and it was delicious!
How to Make Cupcakes
I love that this mug cake is the right amount of dessert (my hubby and I shared it for date night) and so easy to make! You just need to mix the ingredients and put it in the microwave! look by youself:
- Combine all dry ingredients into a microwave-safe cup.
- Add wet ingredients and mix until well combined; microwave.
- Top with mini chocolate chips and strawberries
From start to finish, this chocolate cupcake only takes about 5 minutes to make. Considering how amazing the results are, I think it’s pretty awesome!
More ingredients and flavors:
Try 1-2 drops of peppermint, mint or vanilla, or a pinch of cinnamon or allspice for a change of taste. You can also top the cake with toasted coconut, organic honey, oatmeal, almond butter, peanut butter, peanut butter, bananas, chopped nuts, or whipped cream.

Can Splenda be used in any recipe? In general, Splenda can be used as a 1:1 replacement for white sugar in any baking recipe without altering the texture or flavor. If for some reason the recipe calls for more than 1 ¼ c sugar or the amount of flour is less than twice the amount of sugar, then you will need to reduce the ratio to ½ Splenda:1 sugar.

Start by mixing all dry ingredients and pouring into a microwave-safe cup.
Add wet ingredients and mix until well combined. Pour in 1 teaspoon mini chocolate chips.
Microwave HIGH for 1 minute 45 seconds. Top with remaining mini chips and strawberries. Please enjoy!
