It’s a classic side to any shower or party. This easy recipe has been used in our house for decades and is perfect for our broccoli salad and pasta salad recipes.
Grandma’s Easy Chicken Salad
This chicken salad recipe makes me nostalgic! It’s from my lovely grandma. She always makes a big batch of chicken salad for us when we come to her house. We will have fresh fruit and salad for lunch. so good!
Each ingredient complements each other and the mayo is delicious. The chicken was tender and well seasoned, and the celery and sliced ​​almonds gave it the best crunch.
This recipe is really easy to make. Just like grandma, I like to mix up a big batch and eat it on a croissant for a weekday lunch, or at a party.
How to do it
You will need about 3 cups of chicken for this recipe. Feel free to cook your chicken however you want.
Chick. We like to roast chicken in the oven, but you can also use canned chicken. Sometimes, I even boil chicken breasts, cube them, and season with a pinch of salt and pepper.
dressing. Chop the chicken and celery and set aside while you make the dressing. Whip whipped cream in a large bowl. Add lemon juice, mayonnaise, salt and pepper and mix well.
Add chicken, celery, parsley, and almonds to the mayonnaise. Cover the chicken salad and refrigerate for at least an hour before serving. Best refrigerated.
tip: If you want to use something else, there are some mayo substitutes. Low-fat plain Greek yogurt, pesto, or sour cream.

Freeze and serve
Can you freeze chicken salad? I don’t recommend freezing chicken salad, especially if you make it with mayo. Preferably fresh. But remember, it will keep for up to 5 days in the refrigerator! So if you need it, be sure to make it a few days in advance!
