Cheesy Chicken and Rice Bake is a favorite casserole! I love bringing this meal to a new mom or someone who needs a little love. I usually pair it with salads with creamy pesto, parmesan roasted asparagus, or parmesan-crusted zucchini spears. Even if you do it yourself!

Today’s Cheesy Chicken and Rice Baked recipe is packed with so much flavor and is super easy to make. I’m not going to lie – not all of my kids love broccoli, so some will pick it out. Luckily, the dish was so good that most of them didn’t even realize it was in it (win)!

If you (or your kids) absolutely cannot stand cauliflower, you can easily omit it without losing any of the flavor of the dish. How to Make Chicken Broccoli Rice

Honestly, this is probably one of the easiest casserole recipes out there. There is very little prep work required before scooping everything into the pan and placing it in the oven.

Cook. Cook chicken and broccoli in a large frying pan.

combine. Once the chicken is no longer pink, add the broth and bring to a boil. Add remaining ingredients (except shredded cheese) and mix.

  • Omit the broccoli
  • Use brown or multigrain rice
  • We used italian 5 cheese but could easily switch to cheddar or mozzarella
  • Swap vegetables for carrots, zucchini or squash

This can be up to 24 hours in advance. Simply cover and store in the refrigerator until ready to bake. You may need to add a few more minutes, we recommend storing without cheese and adding before baking.

  • 1 tablespoon oil
  • 1 pound boneless skinless chicken breast cut into bite-sized pieces
  • 2 cups small cauliflower florets
  • 1 cup chicken stock
  • 1 1/4 cups raw white rice
  • 8 ounces cream cheese
  • 2 tablespoons milk
  • 1 teaspoon Italian seasoning
  • Garlic salt to taste
