Breakfast Burritos Make-ahead Freezer Recipe

Nothing beats a hot breakfast on a cold morning. I love these breakfast burritos anytime, anywhere. But especially breakfast. My family loves them. I know you and your people will too. Soft tortillas stuffed with eggs, cheese, bacon and hash browns.
Someone please tell me I’m not the only one who rushes out of school/events/etc a lot. in the morning? ? Most mornings, I barely have time for breakfast – let alone making it for the whole family! That’s where these breakfast burritos come into play.
They’re a breeze on busy mornings, especially if you make them ahead of time and microwave them when you’re ready! I love my kids having a hot breakfast. I think a hot breakfast is more filling than a bowl of cold cereal. These egg/cheese/bacon/potato burritos will keep you and your kids going until lunchtime. Healthy and delicious is the music in my ears!
How to Make Breakfast Burritos
This is such an easy breakfast burrito recipe! Here are the ingredients you need:
- corn cake
- scrambled eggs
- cheddar cheese
- Bacon (For an easy way to make bacon, try this!)
- Cubed Potato Pancakes
Egg. Heat a pan over medium heat. Fry the eggs until cooked through. Add cheese, salt and pepper and pepper if desired.
Hash Brown and Bacon. Cook hash browns and bacon separately.
corn cake. Heat tortillas in the microwave or on the stove. I like to wrap a stack of tortillas in a damp paper towel and heat in the microwave for 30-45 seconds.
gather. Add eggs, a scoop of hash browns, and 1-2 slices of bacon to each burrito, along with any other ingredients of your choice. Fold it up and serve with salsa!

Tips + Storage Information
Breakfast burritos are super delicious without the meat! Make a vegan version, add chopped spinach, sauteed mushrooms, bell peppers, tomatoes, black beans, onions, avocados or any veggies you like!
You can Use any kind of flour (or wheat) tortillas! We use both homemade and store bought – both work great. I know a lot of people love raw tortillas because they’re nice and fresh, but pre-cooked ones are also delicious and quicker. 😉
The size of your tortilla depends on how big you want your burrito to be. The larger the tortilla, the more filling you can put in it.
Additional Burrito Tips:
- When you eat these on the go, Wrap each burrito with a sheet of foil Keeps it warm and makes it easier to hold.

- After assembling the burrito, you can brown the outside of the tortilla Lightly cover the frying pan with cooking spray or oil, then place each burrito on the frying pan (seam side down) for two to three minutes, until golden brown. Flip the other side too to brown it if you like.
They’re the perfect breakfast on the go for everyone. Get ready the night before, Wrap them individually in plastic wrap, put them all in the Ziploc, and shop Store in the refrigerator until ready to eat. reheat 1-2 minutes per side in the microwave.
If you want them to last longer — freeze! They will keep in the refrigerator for about 1-2 months. When you’re ready to eat them, reheat them in the microwave for 3-4 minutes per side.

- 4 tortillas
- 8 eggs scrambled
- 1 cup grated cheddar cheese
- 4 slices bacon
- 2 cups cubed hash browns
