Nothing beats a hot breakfast on a cold morning. I love these breakfast burritos anytime, anywhere. But especially breakfast. My family loves them. I know you and your people will too. Soft tortillas stuffed with eggs, cheese, bacon and hash browns.

Someone please tell me I’m not the only one who rushes out of school/events/etc a lot. in the morning? ? Most mornings, I barely have time for breakfast – let alone making it for the whole family! That’s where these breakfast burritos come into play.

They’re a breeze on busy mornings, especially if you make them ahead of time and microwave them when you’re ready! I love my kids having a hot breakfast. I think a hot breakfast is more filling than a bowl of cold cereal. These egg/cheese/bacon/potato burritos will keep you and your kids going until lunchtime. Healthy and delicious is the music in my ears!

How to Make Breakfast Burritos

This is such an easy breakfast burrito recipe! Here are the ingredients you need:

  • corn cake
  • scrambled eggs
  • cheddar cheese
  • Bacon (For an easy way to make bacon, try this!)
  • Cubed Potato Pancakes

Egg. Heat a pan over medium heat. Fry the eggs until cooked through. Add cheese, salt and pepper and pepper if desired.

You can Use any kind of flour (or wheat) tortillas! We use both homemade and store bought – both work great. I know a lot of people love raw tortillas because they’re nice and fresh, but pre-cooked ones are also delicious and quicker. 😉

The size of your tortilla depends on how big you want your burrito to be. The larger the tortilla, the more filling you can put in it.

If you want them to last longer — freeze! They will keep in the refrigerator for about 1-2 months. When you’re ready to eat them, reheat them in the microwave for 3-4 minutes per side.
