Prepare
- Slice the sweet potatoes into thin slices, about 1/4 inch (6 mm) thick.
- Put in the toaster and set it to the longest cooking time. When it pops, flip the sweet potato chips over and bake 1 more time. Depending on the strength of your toaster and your preference, you may need to toast 1 more time.
- Remove from toaster and let cool enough to handle.
- Scramble eggs with salt and pepper.
- Place two slices of cooked bacon on sweet potato toast. Put scrambled eggs on top.
