You’ve probably figured it out by now…my family loves to eat! A lot of what we do centers around food and provides an excuse to party. The Luna family has always been like this, and I have a feeling it will stay that way.
One of our favorite foods is appetizers like today’s Avocado Bacon Omelet. I have to say this is the best egg roll I’ve ever had. reason? ! They have 3 of my favorite toppings – avocado, bacon and cheese. Put these together, wrap them in fried wontons, and you’ve got a great appetizer that’s perfect for any party or gathering.
We’ve been making egg rolls for a long time and our classic version has chicken and coleslaw. We also love our copycat version of the Cheesecake Factory which is amazing. This recipe has to be my favorite because it tastes great and is so easy to make. We even use pre-made bacon, which is easier and faster to make. How can you go wrong in these areas? Two words: no! ! We are generally fans of fried foods! don’t you agree? !
Easy Avocado Egg Rolls
Prepare. In a large frying pan, heat about 2 inches of oil over medium heat. Slice avocado and drizzle with lime. Sprinkle with salt as needed.
gather. Place an egg roll wrapper on the work surface. Place ½ slice of cheese in the center. Place 1 slice of avocado on top of cheese, then a strip of bacon, cut in half. Finish with another slice of avocado.
seal. Fold the portion of the wrapper pointing towards you over a pile of avocados and bacon. Fold the left and right corners in the middle and roll up the egg roll almost all the way. Be sure to fold tightly without openings so that the ingredients don’t fall or leak out. Dab a little water on the remaining corner of the top with your fingertips, then seal the corner to the omelet to close it.
saute. Repeat steps until all ingredients and wrappers are used. Carefully place a few omelets in the hot oil and cook, turning them over once, until golden brown on each side.
Serve. Remove from oil, drain and cool on a plate lined with paper towels.Serve whole or cut diagonally in half
Tips, Changes + Stored Information
Recipe Instructions:
- Ripe avocados should only be slightly fluffy when squeezed: they should not be rock-hard or so soft that they bruise/squash easily
- Use this bacon in oven recipes for easy bacon cooking. You can also crumble bacon strips when adding bacon to the omelet.
- Use a thermometer to make sure my oil is around 350 degrees for frying. If you don’t have a thermometer, insert the back of a wooden spoon into the oil and if the oil bubbles around it, the oil is hot enough!
Air fryer: Put these in the air fryer and cook at 400 degrees for 8-9 minutes, then flip and cook for another 4-5 minutes.
bake: Coat them with cooking spray and bake at 425°F for 15-20 minutes or until browned and crispy.
shop Hard-boiled omelets last up to a week in an airtight container in the refrigerator. Consider lining the bottom of the Tupperware with a paper towel to catch any excess oil/liquid leaking from the egg roll. Reheat in a lightly greased pan, or microwave until fully heated.
freeze:
- Baked: Let them cool completely, wrap individual egg rolls in plastic wrap, place in a freezer-safe bag or container, and keep in the freezer for 3-6 months. Reheat in the oven or microwave without thawing first until they are warmed up.
- unbaked: Quick freeze them until they are firm, about an hour, then wrap them individually in plastic wrap. Place in freezer-safe bag for 3-6 months. Fry on medium-low heat until cooked (avoid high heat as it may still be cold on the inside and golden on the outside).
