One summer not long ago, my mom and I got together every Wednesday night. I always bring new desserts and she always tries new recipes. fun, right? It really forces us to try new recipes and find out what we like and don’t like. One of our favorites we’ve found is this Asian Pasta Salad.

After looking at all the delicious ingredients, she knew we had to give it a try. We love chicken, peppers, pasta, spinach, carrots and all things Asian, so it’s no surprise that we love this recipe. In fact, we’ve made it several times because it’s perfect for BBQs and holiday parties.

I know you’re going to love this Asian Pasta Salad. It really is one of my favorites right now and I can’t wait to have it again. Pasta and spinach (with a homemade dressing) make it so delicious!

Make Asian Pasta Salad

spaghetti. Make pasta as directed and set aside.

sesame seeds. Cook the sesame seeds in a skillet over medium heat for 1-2 minutes, until lightly toasted. shelved.

dressing. Using a whisk, combine vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, and pepper until smooth.

combine. Pour the dressing mixture over the pasta, chicken breasts (try our oven-roasted chicken), red peppers, shredded carrots, and spinach and toss to combine. Please enjoy!

Tips + Storage Information

Sugar substitute: If you want to cut back on the added white sugar, or just run out of sugar for now, you can use it in place of agave or honey. This may change the texture of the dressing, so add another tablespoon or so of water to thin the dressing.

spaghetti: If you don’t have rotini, you can always use pasta, shells, or macaroni. The shape of the pasta won’t change the flavor, but it’s up to your preference.

shortcut: Use roast chicken and a bag of pre-chopped carrots.

If you plan to serve it later, you should separate the salad ingredients so they don’t get soggy.
