Give me all the healthy salad recipes! I can’t get enough of salad these days. But not just any salad – they have to be full of flavor or they will be bland.
This recipe is not boring at all…I love this Arugula Parmesan Salad with some of my favorite toppings. tomato? Check. Parmesan cheese? Check. The color of these salads gave me all my heart!
Eat this salad alongside a hearty dinner to make things a little easier. Or, use it for healthy lunch ideas. You can easily prep the ingredients ahead of time and toss in the dressing just before you’re ready to eat it. Simple, healthy and delicious.
How to Make Easy Arugula Salad
You can whip up this salad super fast! Grab these ingredients:
- young arugula leaves
- cherry tomatoes
- pine nuts
- olive oil
- rice vinegar
- parmesan cheese
- salt and pepper
Put everything (except the avocado) in a large bowl with a lid. Make sure the bowl is covered, then shake everything together to mix well. Slice the avocado thinly and serve on top of the salad.
Arugula Salad Dressing
You definitely want a dressing like balsamic vinegar to lightly coat the arugula and give it a light flavor. This recipe combines olive oil and rice vinegar for a simple but delicious dressing.
You can replace vinegar with red wine vinegar, apple cider vinegar, balsamic vinegar, etc. You can also replace the oil with grapeseed oil, canola oil, vegetable oil, etc.
Tips and Variations
You can start with the same arugula leaves and vinaigrette, but skip the tomatoes, pine nuts, and avocado, and you can garnish it with a combination of these ingredients!

- 4 cups young arugula leaves rinsed and dried
- 1 cup cherry tomatoes
- 1/4 cup pine nuts
- 2 TB olive oil
- 1 TB rice vinegar
- 1/4 cup parmesan cheese
- salt and pepper to taste
- 1 large avocado peeled, pitted and sliced
Combine arugula, tomatoes, nuts, oil, vinegar, Parmesan, salt and pepper in a large bowl with a lid. Cover and shake to combine.
Serve with avocado slices on top
