Air Fried Zucchini Recipe Healthy + Delicious

Healthier Fried Zucchini
If you’re like me, you love all things fried. The fried zucchini dip ranch is delicious. Well, now you can enjoy this goodness with a little less guilt!
This air fryer zucchini isn’t fried, which means far fewer calories. But don’t worry, it doesn’t skimp in the flavor department. It still has that mouthwatering crispy crust and soft tender heart.
Slicing the zucchini into spears instead of discs allows the batch to move a little faster and each piece has more substance. Now you feel like you’re eating zucchini fries! !

How to make
Prepare. Preheat the air fryer to 375 degrees.

dip. Dip zucchini strips in flour, then egg, then flour, then egg. Dip them into the Panko at the end.
saute. Spray the air fryer racks with oil. Lay the sticks on the rack in a single layer. Spray the sticks with olive oil spray and fry for 13-14 minutes. Sprinkle with freshly grated Parmesan cheese.
Alternative cooking options
If you don’t have an air fryer, you can easily fry these in a pan with some vegetable oil. You can also bake them.
bake: Line a baking sheet with parchment paper and preheat oven to 350°F. Place sticks in a single layer, spray with cooking spray and bake for 15-20 minutes, flipping halfway through. Put them under the broiler.
Tips for Crispy Zucchini Bars
Double dip: I really like to coat my zucchini thoroughly, so I dip the panko twice in the flour and egg mixture. The extra step is really worth it so every bite is crispy and delicious.
Don’t overcrowd: Air fryers work best when there is enough airflow in all directions for the food to fry. You only want one layer. The sticks can be placed next to each other, but make sure they are not too crowded.
Variations and Dips
seasoning: An easy way to season it is to use Italian Panko breadcrumbs.Some other flavor mixes you can try are adding
- Taco Mix
- ranch dressing
- Indian mix
- lemon pepper
- Paprika or red pepper flakes for heat
Whatever seasonings you decide to add, if you deviate from the original recipe, I would reduce or omit the added seasonings listed in the recipe or the flavors would be too strong.
Breadcrumb options: In addition to switching flavors, you can easily change the type of coating used. You can try gluten-free bread or panko crumbs. For a low-carb version, just coat with a mixture of almond flour and Parmesan cheese.

Make ahead and store leftovers
in advance: I sometimes coat my zucchini the day before and place them on a plastic covered plate and put them in the fridge until I’m ready to fry them.
Leftovers: Place leftover air fryer zucchini strips in a storage container and keep in the refrigerator for 2-3 days. To reheat them, simply place them back in the air fryer set to 375°F for about 3 minutes, or until hot and crisp.
