Calling all hot sauce lovers! Michelin-starred chef Akira Back’s eponymous Dubai outlet at W Dubai, The Palm, is back on fire this June with a second collaboration with homegrown hot sauce brand Haute Sauce. The result of the creative collaboration is a limited edition irresistible gourmet speciality.

‘Haute hirame’ This dish features a thinly sliced piece of flounder on a bed of ruffled premium sauce, served with fragrant fresh cilantro and ginger gremolata.

Seasonal Hot Sauce Puckering combines the tartness of raw mangoes with fiery chili peppers to create a sweet, sour, and spicy hot sauce reminiscent of drinking cool raw mango juice on a hot summer day.

Puckering is one of Haute Sauce’s best-selling sauces, making it the perfect addition to the acclaimed Akira Back menu. The partnership marks the second time the artisanal hot sauce brand has partnered with Akira Back Dubai. Previously, in November 2020, Mellowing Haute Sauce was one of the main ingredients in the restaurant’s vegan charred mushrooms and pineapple ceviche.

Conceived by Akira Back’s Chef Giovanni Ledon, he said: “I am delighted to be working with Ambika at Haute Sauce again. We both share a similar love for spicy food, which is balanced and full of flavour. What we did this time The dish highlighted the Puckering Haute Sauce made with raw Indian mangoes, harvested in season. We can’t wait for you to try the dishes we have created.”

Ambika Rajgopal, founder of Haute Sauce, added that it was a rare opportunity to work with Chef Giovanni and the Akira Back team, who love the culture of the community and support a restaurant of this status by partnering with local artisan producers.
