Carnitas Tacos Slow Cooker Recipe

The pork was cooked in a crockpot until it was super tender and fell apart. It is flavored with orange juice, lime juice and spices. Tear the pork apart and add to the tortilla for the most delicious tortilla ever! Perfect for a large group or just your small family.
Carnitas are tender pieces of pork cooked until it almost melts in your mouth. They are usually cooked in lard and flavored with citrus and spices. We skipped the lard and opted to slow cook until they were tender. You can find the recipe for these delicious tacos here.
How to Make Carnitas Tacos
Combine rub ingredients (oregano, cumin, olive oil) in a small bowl and set aside. Pat the pork chops dry and coat them with garlic salt and pepper. Spread ingredients over pork chops and place in slow cooker, fatty side up. Add minced garlic, onion and jalapeño. Top with lime juice and orange juice.
Cover the slow cooker and cook on high for 6 hours or on low for 9-10 hours. Let the pork cool for 20 minutes before shredding. Make sure to discard any large chunks of fat. Add pork to hot tortillas and add any toppings desired.

How to keep tortillas warm: We like to use tortillas with enchiladas, but you can also use tortillas. There are several ways to keep tortillas warm. This is especially useful when working with tortillas, as they tend to tear unless warm.
- Tortilla Warmers: Heat up tortillas in the microwave and place them in the tortilla warmer
- Crockpot: Dampen a kitchen towel with warm water. Wrap the tortillas in a towel and place in a warm crock pot.
- Heating Pad: Wrap the heating pad in a towel. Arrange the tortillas evenly on the plate. Place the plate on top of the heating pad. The heat will seep through the towel, keeping the plate warm.
If you don’t want to use tortillas, you can serve burritos on tortilla chips or even on a lettuce wrap.
do it in advance: I have good news! You can make the meat ahead of time. And you can easily store leftovers in the refrigerator or freezer. Be sure to add any drippings to the storage container to keep the meat moist and tasty.
- Refrigerator: Store carnitas in an airtight container in the refrigerator for about 4 days.
- Freeze: Store in a freezer-safe container for 2-3 months.
- Reheat in a crock pot or a covered skillet in the oven. To crisp them up, simply place them under the broiler for 1-2 minutes. Be careful not to burn them.

- 4 pounds boneless pork chops, skinless
- 2 teaspoons garlic salt
- 1 teaspoon pepper
- 4 teaspoons minced garlic
- 1 onion chopped
- 1 jalapeno seeded, chopped
- 1/2 cup orange juice
- 1/4 cup lime juice
- Tortilla Corn or Flour

- 1 tablespoon olive oil
