Easy Spinach Tortellini Salad Recipe

Our family is always looking for delicious salads that can be added to meals. Today, I want to share one of my personal favorites.
This pasta salad is particularly suitable for summer barbecues and dinners, because it tastes amazing, but the ingredients are so simple.
In addition to tortellini, this recipe requires chopped spinach, olives, parmesan cheese and cherry tomatoes. It’s all with some Italian condiments-a perfect compliment to these fresh ingredients-cold drinks. This is definitely a way to please the crowd!
How to make spinach tortellini salad
Tortellini. First cook the tortellini according to the instructions on the package. After cooking, rinse with cold water and drain. If cold water does not completely cool the pasta, you can put it in the refrigerator until it is cold enough to mix with other ingredients.

We like the taste of this recipe, but like to change it occasionally by adding the following:
- Mini pepperoni
- Feta cheese (not Parmesan cheese)

- Chili or pepper
- Greek seasoning (not Italian seasoning)
If we take the Greek route, we often add fresh basil. Completely changed the taste, but still so good!
Can I use fresh spinach? Yes! Of course. It is equivalent to a cup (or a large handful) of fresh spinach. Make sure to chop it up before mixing it with all other ingredients.
How to lead + store
Can it be made in advance? You can mix tortellini, spinach, cheese, tomatoes, olives and any other ingredients the day before you plan to eat it.
Make sure not to add seasonings before serving to ensure that the ingredients do not get wet.
How to save leftovers? To store leftovers, cover the plate with plastic wrap or put the leftover salad in an airtight container. It can be stored in the refrigerator for up to 3-4 days. Vegetables may get wet quickly, so try to use them up as quickly as possible.
Can you freeze this salad? This special Tortellini salad should not be frozen. Some ingredients, such as tomatoes, do not freeze well, and they become very watery and mushy after thawing.

- 1 10 oz.Pack frozen, chopped spinach thawed and drained
- 1/2 cup grated Parmesan cheese
- 2 cups cherry tomatoes halved
- 1 2 oz.Can slice black olives
