- 1 whole cinnamon stick
- 4 whole green cardamom pods
- 1 cup water (240 ml)
- 1.5 inches fresh turmeric, peeled and grated, (about 1.5 tablespoons) or 1.5 teaspoons ground turmeric
- 1.5 inches fresh ginger, peeled and grated
- 6 whole black peppercorns
- 1 ½ cups whole milk (360 ml)
- 2 teaspoons black tea bags
- 1 tablespoon sugar or honey
- Cinnamon powder, for garnish

Prepare
- Add the cinnamon stick and cardamom pods to the mortar and pestle and mash into small pieces.
- Add water, turmeric, ginger, black peppercorns, cinnamon and cardamom to a small saucepan. Bring to a boil over medium heat, then immediately reduce heat to low and continue to simmer for 3 minutes.
- Pour in milk, add tea and heat to medium heat. Bring to a boil, then immediately reduce heat to simmer for 5 minutes, stirring occasionally. Remove pot from heat, stir in sugar, and let soak for 3 minutes.
- Strain the chai through a fine mesh sieve into a heatproof measuring cup with a spout, making sure to squeeze out all the liquid. Discard solids.
- Divide chai into 2 cups. Garnish with ground cinnamon and serve immediately.
