  • 1 whole cinnamon stick
  • 4 whole green cardamom pods
  • 1 cup water (240 ml)
  • 1.5 inches fresh turmeric, peeled and grated, (about 1.5 tablespoons) or 1.5 teaspoons ground turmeric
  • 1.5 inches fresh ginger, peeled and grated
  • 6 whole black peppercorns
  • 1 ½ cups whole milk (360 ml)
  • 2 teaspoons black tea bags
  • 1 tablespoon sugar or honey
  • Cinnamon powder, for garnish

Prepare

  1. Add the cinnamon stick and cardamom pods to the mortar and pestle and mash into small pieces.
  2. Add water, turmeric, ginger, black peppercorns, cinnamon and cardamom to a small saucepan. Bring to a boil over medium heat, then immediately reduce heat to low and continue to simmer for 3 minutes.
  3. Pour in milk, add tea and heat to medium heat. Bring to a boil, then immediately reduce heat to simmer for 5 minutes, stirring occasionally. Remove pot from heat, stir in sugar, and let soak for 3 minutes.
  4. Strain the chai through a fine mesh sieve into a heatproof measuring cup with a spout, making sure to squeeze out all the liquid. Discard solids.
  5. Divide chai into 2 cups. Garnish with ground cinnamon and serve immediately.
