What is Brooke?
“brookie” is a mix of brownies and cookies, and I can tell you right now, they are amazing!
Sometimes, sweets come and you can’t quite decide whether you want brownies or cookies. You don’t have to decide when you can make both in one delicious, chewy cookie.
These brownie cookies are soft and chewy like brownies, but also have a cookie-like crust. It also has a crispy crust like chocolate cake on the outside!
They are super tasty and we highly recommend if you have never tried a brookie!
How to Make Brownie Cookies
For a more homemade version (if you don’t have brownies on hand), try this recipe below. It’s really easy and these cookies turned out delicious.
Prepare. First preheat the oven to 350 degrees.
wet ingredients. In a saucepan, melt butter and 1 cup chocolate chips over low heat, stirring occasionally. When it’s all melted together, remove from heat. Stir brown sugar into mixture and cool slightly. Then add the eggs and vanilla.
dry ingredients. Add dry ingredients – flour, salt and cocoa – and mix. Then add the remaining chocolate chips.
bake. After the batter is all mixed, let it rest for 30 minutes. After resting, place tablespoons of dough on a greased cookie sheet. Bake for 10 minutes. Remove from oven and cool on a baking sheet for 5 minutes, then transfer to a wire rack to cool.
Mix to make brownies:
- 1 box brownie mix
- ½ cup vegetable oil
- 2 eggs
- â…“ cup chocolate chips
Start by adding the brownie mixture, oil, and eggs together until well combined.
Then fold in the chocolate chips. Cook for 8-9 minutes at 375 degrees. Cool on a baking sheet for 3 minutes, then transfer to a wire rack to cool completely.
Tips and Variations
Tip:
- Use good quality chocolate chips
- In step 2, make sure not to overheat the butter chocolate mixture. As soon as the chocolate is melted and stirred into the butter, remove the mixture from the stove. Heating it for too long can cause the chocolate to stick, making it grainy and mushy.
- If the dough is too sticky to scoop, simply place it in the refrigerator for 20-30 minutes.
You can make these brownie cookies with a couple Different variations:
- Add caramel cubes and chopped pecans to make them “turtle brownie cookies.”
- Change chips to add a different flavor. We love using butterscotch chips, white chocolate chips and/or peanut butter chips!
- Add crushed Oreo cookies to the batter to make “Oreo Brownies.”
storage tips
Like other cookies, you can make Brownie Cookie Dough advance and shop Bake later. Cover the dough and store in the refrigerator for 1-2 days.
for longer storage Scoop the dough into balls, place them on the pan, and freeze. Once solid, transfer them to a freezer-safe container. They can be kept in the refrigerator for up to 2 months.Thaw about 15 minutes before baking

- 1/2 cup butter cut into small pieces
- 1 (12-ounce) bag semisweet chocolate chips
- 1 cup brown sugar packed
- 2 eggs
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1/4 cup unsweetened baking cocoa
- 1/2 teaspoon salt

Heat oven to 350 F.
