Sometimes I get tired of making the same recipe week after week. I wanted something different and delicious, but also easy and something my kids would love too.

This cauliflower casserole is all that stuff and more! Packed with healthy veggies, it’s delicious and easy to throw in the oven for dinner after a long day.

The first time I made this recipe, my kids were hesitant to try it. But I can honestly say they love it! Even my kids who hate cauliflower love it. Now this is saying something. So there’s no reason why you shouldn’t try this casserole recipe. I guarantee your whole family will love it.

How to Make Cauliflower Casserole

Start by preheating the oven to 450 degrees.

cauliflower. Spread the cauliflower slices evenly on a rimmed baking sheet. Drizzle with olive oil and sprinkle with ½ teaspoon salt and ¼ teaspoon pepper. Bake for 15-20 minutes, until crisp and tender, then remove from the oven and leave the oven on.

Sauce. To roast the cauliflower, combine the sour cream, heavy cream, minced garlic, and remaining ½ teaspoon salt and ¼ teaspoon pepper in a bowl. Toss the cauliflower slices with the sauce until coated.

Recipe Tips:

  • Line the pan with parchment paper for easy cleanup.
  • You can use frozen cauliflower, but don’t thaw it first. You may only need to add a few minutes to the baking time. Watch carefully so they don’t burn.
  • I love the rich, nutty flavor that comes with the cauliflower rating, but you can also use steamed cauliflower.
  • Use freshly grated cheese. The prepackaged ones have a coating that doesn’t easily melt the cheese.
