Batter. Combine the baking mixture, milk, sugar, eggs, and cinnamon in a medium bowl. Mix until fully mixed. Pour the batter into the pie pan.

Ingredients. In a separate bowl, use a fork or pastry knife to mix the baking mixture, brown sugar, butter, and cinnamon.

bake. Spread the filling on the batter in the pie pan. Use a butter knife to gently press the top down into the batter, just like making a tic-tac-toe board several times on top of the cake. Bake for about 30 minutes or until the toothpicks are clean. Let the shortbread coffee cake cool in a pan before cutting and serving.

You can choose to create a middle layer of the cinnamon mixture instead of pressing the batter into the batter in a tic-tac-toe game. Put half of the batter into the pie pan. Use half of the top mixture to add a layer. Put the remaining batter on top, and then put the remaining cinnamon filling.
