We absolutely love having easy cookie recipes on hand as they are a must in our house. Today, we’re rounding up the best and easiest cookie recipes and we hope you enjoy them.
With so many flavored varieties, they taste great with cold milk or ice cream in the middle (please tell me you’ve tried them).

Cookie Making Tips
Common ingredients: One thing I especially love about most cookie recipes is that they use ingredients that I always have on hand. Some cookie recipes have a lot of ingredients, others just call for a few.
A lot of times, ingredients I don’t have on hand are easily substituted for other ingredients I have.
- remix Includes chocolate chips, crumbled candy, chopped diced and sprinkles. These can often be replaced without affecting the dough.
- brown sugar: Not often, but sometimes I find that I don’t have enough recipes for the recipes I’ve started. Thankfully, I can quickly make some light brown sugar by thoroughly mixing 1 cup of white sugar and 1 teaspoon of molasses. Make dark brown sugar with 2 teaspoons of molasses.
- baking powder Mix ¼ teaspoon baking soda + ½ teaspoon cream of tartar + ¼ teaspoon cornstarch.
- baking soda: ½ tsp baking soda = 2 tsp baking powder
- 1 egg Can be substituted with ÂĽ c applesauce
Cake Mix Cookies 101
An easy cookie is the cake mix cookie: When making these cookies, use only the dry cake mix from the box plus the ingredients listed in the recipe. Do not include the wet ingredients listed on the back of the cake mix box. Some other notes about cake mix cookies include:
- The most common cake mix size at my grocery store is 15.25 oz. However, I used a slightly larger mix and it turned out great – 1 oz is only about 4 tablespoons of cake mix.
- The dough will be sticky. It helps to cool the dough for 20-30 minutes before scooping it out. Cooling also helps cookies spread too thin.
- Don’t over bake. In fact, take them out like they’re on the cusp of unfinished business. They will finish baking when they cool on the hot baking sheet.

Double up on cookie sheets! While some of the recipes listed require a short cooling time, most of them are made and baked. To make the process faster, there are two cookie sheets. You can fill the second sheet while one is baking.
Soften butter: One factor that can hinder how long it takes to make a batch of cookies is softened butter. For ideas, see our post on how to soften butter quickly.
one step ahead: Probably one of my favorite things about cookies is that usually, the dough can be made ahead and frozen for later. When you need a quick treat for an uninvited guest or a late-night craving hit, all you have to do is pull out some cookie dough balls and bake them.
