LENTO opens second restaurant in UAE
United Arab Emirates Chef and restaurateur Faisal Naser launches LENTO Dubai featuring a new menu and minimal industrial style
LENTO, which means “slow” in Spanish, has opened its second UAE dining destination in Dubai. Following the success of Emirati chef and restaurateur Faisal Naser’s LENTO Abu Dhabi featuring hand-mashed burgers and delicious fried chicken, the Dubai-based setting is an evolution of Naser’s culinary curiosity.
In addition to LENTO Abu Dhabi’s specialties, LENTO Dubai will also offer globally-inspired dishes that will be showcased as limited edition specials.
Trailers for these specialties include Aji amarillo prawns (Peruvian yellow chili and prawn bisque), seafood paella (monkfish and prawns), Teochew chili fins (with fermented honey), honey lasagna and Emirati fish and chips (deep fried fish, Emirati masala sautéed vegetables, triple cooked fries, tamarind and black aioli with grated lumi) – he used to cook with Anthony Demetre (chef and owner of the Michelin-starred restaurant Wild Honey in the UK) prepared dish.
Signature burgers include Mushroom & Swiss (grass-fed Wagyu double patty, LENTO spice umami rub, double Swiss Gruyere cheese, caramelized onions, browned butter and porcini aioli, caramelized onions), honey Butter Fried Chicken (local fresh fried chicken dip with ranch coleslaw, cheese in a fermented honey and butter emulsion) and Picante umami (grass-fed wagyu double pie, crumbled American cheese, green salsa, hot sauce, shallots and chopped jalapenos).
Desserts include Naser’s French toast Lentoast (French toast made with English cream, grapefruit and salted caramel ice cream), and his highly addictive Brownie Box (six fudge brownies made with Valrhona chocolate) Ni).
This 30-cover restaurant showcases a minimalist industrial look. The monochromatic grey palette complements plush tan leather, repurposed wood and wild plants. Standout elements of the stylish interior include a KAWS-inspired sculpture at the DJ booth and hip-hop vinyl on the wall.
LENTO represents Naser’s way of spending time in the kitchen. Naser says: “My ethos is quality over quantity, so artisanal over commercial. I believe the best taste comes from slow preparation. At LENTO, I use the same concept in the fast food framework. We produce 90 from scratch. % of the ingredients. The menu and the food seem simple, but there’s a lot going on in each dish. In my cooking, I make sure there’s always an element of slowness or a slow condiment in everything I cook — — Black garlic, aged cheese or special homemade vinegar.”
