Prepare
- Remove the shells and legs from the shrimp, core them, and place in a bowl.
- Cover the shrimp with the beaten egg, flour, and cornstarch, then stir with chopsticks, making sure each shrimp is well coated.
- Heat the oil in a wok over medium heat, then once it reaches temperature, fry the shrimp in five batches for two minutes. Repeat until all shrimp are cooked and set aside.
- In a bowl, add plain instant cereal drink, chicken powder, sugar and milk powder, and stir to combine.
- In a large frying pan, melt the butter, then add the chilli and curry leaves and fry until the butter starts to bubble.
- Add the shrimp to the pan, stir quickly to coat with butter, then quickly add the dry cereal topping, continuing to stir until the shrimp are fully coated.
- Arrange the shrimp on a plate with all the grain crumbs.
