Vegan Apple Fritters

- 6 cups canola oil (1.5 L), for frying

- ½ teaspoon vanilla extract
- 2 cups powdered sugar (240 g)
Prepare
- Heat canola oil in a large heavy-bottomed pot over medium heat until it reaches 350°F (180°C). Place a wire rack inside a rimmed baking sheet.
- In a large bowl, whisk together flour, brown sugar, ½ teaspoon cinnamon, nutmeg, allspice, salt, and baking powder.
- In a separate large bowl, whisk together â…” cup (160 ml) almond milk, vegetable oil, apple, melted margarine, and vanilla extract.
- Slowly add dry ingredients to wet ingredients, beating until smooth.
- Working in batches, spoon batter into hot oil in ÂĽ cup (60 ml) increments and fry until golden brown and cooked through, 4-5 minutes. Use a slotted spoon to transfer the fritters to a wire rack and let cool.
