Stuffed Sweet Potatoes How to Microwave

These microwave sweet potatoes can be made into a dish in no time. If you need a little extra, try serving it with baked beans, baked chips, or baked green beans.

I’m not kidding when I say today’s recipe is making my mouth water. We first made these about a month ago and hubby and I loved them. These pork stuffed sweet potatoes recipe comes from my friend Amy in Texas.
She shared this recipe and we’ve been hooked ever since. We’ve always loved sweet potatoes (these Roasted Sweet Potato Chunks and Sweet Potato Soup recipes are a favorite), but stuffing them with some of the best toppings (hello – pork, bacon, cheese + sour cream) makes them even more delicious.
If you haven’t tried microwaved sweet potatoes, you must. Not only are they quick and easy, they’re delicious! ! For this recipe, I went to the produce section of the grocery store and found that they have individual sweet potatoes for microwave use, but don’t need those – regular sweet potatoes will do!
Stuffed Sweet Potatoes
Prepare. Rinse the potatoes and poke holes in the potatoes for ventilation.
microwave. Place potatoes on a glass plate, cover with a damp paper towel, and microwave for 3-5 minutes. Then, turn over, re-wet the towel and microwave, and heat for another 3-5 minutes.
bake. Roast these sweet potatoes, but it usually takes 35-45 minutes to bake them at 400 degrees. We definitely think the microwave route is the best way.
full. Once you’re done with your sweet potatoes, you can cut a slit where you left off and fill it with your favorite toppings. The options for what you use to fill these bad boys are endless, but we like to add:
- Shredded Pork – pork, chicken and beef are all great!
- Cheese – we love cheddar, but crumbled blue/feta, grated parmesan would work great too!
- Baked Potato Toppings – Butter, Sour Cream, Green Onions/Chives
- Seasonings – salt, pepper and other favorite seasonings
