Easy Cheesy Hashbrown Casserole is the perfect side dish for any dinner or festive meal. It only takes 5 minutes to prepare, and it is rich and delicious!

I like a good casserole, whether it is a main dish or a side dish like this! For a simpler casserole style, try cauliflower casserole or broccoli cheese casserole.

We have discussed our love for potatoes many times on Lil’ Luna. One of the best ways to enjoy them is in the casserole format. Although we have many potato casserole recipes on the blog, today’s Cheese Hashbrown Casserole is another favorite, perfect as a side dish for any dinner or holiday.

This hash brown casserole reminds me of the funeral potatoes we have made over the years, but it’s easier! ! The best part is that we usually have these ingredients at all times. All you need is some hash browns, butter chicken, sour cream, cheese, bacon, salt and pepper.

This dish is always a favorite!

How to make a hash brown casserole

This recipe is very simple. And fast!

Dump, mix + bake. You really mix everything together, pour it into a 9Ă—13 container and bake it! ! You add some more cheese before the cooking is complete, but I tell you-it only takes five (yes, 5!) minutes of work.

It does require bacon, but if you want it convenient, you can just use pre-cooked bacon. We like that it requires very little work and is delicious.

There are several ways to change this recipe. Here are some suggestions:

  • Cubic potato pancakes-you can use these, but you may need to cook a little longer because the potatoes are thicker.

One step ahead. Of course! We like that this side dish can be made 48 hours in advance. Just put the lid on and store in the refrigerator until you are ready to bake. If the casserole is still cold, increase the cooking time by a few minutes.

freezing. Wrap the plates in freezer wrapper or foil and store them in the freezer for up to 2 months. Defrost completely before baking. Bake in the oven at 350 degrees until fully heated.

Reheat. It’s easy to reheat your hash browns casserole! Simply preheat the oven to 375 degrees and reheat it for 7-10 minutes or until it is hot. Or you can reheat it in the microwave until it is fully heated. The time will vary depending on your microwave oven.

  • 5 slices of cooked bacon (cut into ½ inch pieces)

  • 1 package frozen potato cake shreds thawed
  • 10 ounces butter chicken and mushrooms (1 can)
  • 1 cup light sour cream

  • Preheat the oven to 375 degrees.

  • In a large bowl, combine hash browns, bacon, soup, sour cream and 1 cup cheese. Mix until fully combined, then spoon into a greased 13×9 dish.
