The bacon, egg and hash brown casserole is one of our favorite delicious breakfasts of all time! It feeds a large group of people and it takes a few minutes to cheer up.
This cheesy hash brown breakfast/casserole dish may be in my list of top ten breakfast recipes. It’s perfect because it can feed a large group of people, it’s very simple to put together, and it’s actually really cheap! Add maple bacon cinnamon rolls, French toast muffins and strawberry banana smoothie to complete your breakfast.

I think I have mentioned it countless times before, but I love breakfast recipes-especially savory ones! Unfortunately, we don’t have much time in the morning to make these delicious dishes, but we still try to make them occasionally on weekends, especially on special occasions and holidays.
Over the years, we have tried many new breakfast casseroles, such as our biscuit and egg casserole and sausage breakfast casserole, but we wanted to try a breakfast casserole with hash browns!

- 1 pound bacon diced
- 4 cups frozen shredded potato thawed
- 9 eggs lightly beaten
- 2 cups shredded cheddar cheese
- 1 1/2 cups cottage cheese
- 1 1/4 cups shredded Swiss cheese

Preheat the oven to 350 degrees and grease a 9×13 inch baking pan.
Boil the diced bacon in a pan until browned, then put it in a large bowl.
