cut. Fold it in half so that it measures 12 by 9 inches. Cut 12 rolls. Each roll will measure 3×3 inches. (*Notes for small rolls-roll the rectangle into 12.5 x 20 inches. Fold in half and cut 20 small rolls. The size of these small rolls is 2 ½ inches square.)

rise. Lightly grease the biscuit slices, then separate the rolls 1-2 inches. Put the lid on and let the dough rise for another hour or until it doubles in size.

bake. Preheat the oven to 350°F, then bake the rolls for 12-15 minutes. The top will be light golden brown. Remove from the oven and brush the top with the remaining butter.

Top it with their famous cinnamon butter!

Tips + storage information

Use 1 â…” teaspoon instead Instant yeast powder. Just make sure to mix instant yeast with flour instead of adding it to milk like regular yeast.

In order to obtain a light and fluffy roll, Don’t over mix your dough. You can use Bosch, KitchenAid or any other electric mixer, as long as you make sure that you don’t mix the dough for more than 8-10 minutes. If you knead the dough by hand, the general rule of thumb is 10-12 minutes. Your dough will be smooth and will maintain its shape when it can move!

Make and freeze these rolls in advance:

  • Just make sure to place the newly formed rolls on parchment paper or foil-lined trays in the refrigerator before they have a chance to rise. You can wrap them with some plastic wrap and cover them with some foil.
  • If you plan to freeze your pre-made rolls, it is best to use active dry yeast instead of instant yeast. You may also want to add up to 50% yeast to the dough to ensure good fermentation after thawing.
  • For best results, they should be used within one month after freezing and thaw in the refrigerator overnight before baking.
  • If time is not enough, you can also thaw on the counter at room temperature. But remember, because they are frozen, they also take several hours to grow and double.
  • We recommend making fresh cinnamon butter and adding it to the rolls after they come out of the oven.

Living in the desert, the temperature is usually high enough for the dough to ferment properly, but if your place is cold or cold, here are some useful tips to ensure that your dough ferments just right:

  • Boil some water, then put it in a bowl or pan on the bottom shelf of the oven, place the rolls on it and close the oven door. This method is usually very effective!
  • You can also try to preheat the oven to about 300 degrees, and then place the rolls in a warm place on the top of the oven to raise them. (Make sure not to put them in the oven for now!)
