Oatmeal Raisin Chickpea Cookie Dough

- 1 can chickpeas, drained (reserving liquid) and rinsed
- ÂĽ cup peanut butter (60 g)
- 2 tablespoons honey
- 2 teaspoons vanilla
- ½ teaspoon salt
- ÂĽ cup chickpea water (60 ml)
- ½ cup oats (50 g)
- ½ cup raisins (75 g)
- 1 teaspoon cinnamon

Prepare
- Spread the drained chickpeas on a towel and pat dry.
- Remove the chickpea shells.
- Place chickpeas, peanut butter, vanilla, honey and salt in a food processor.
- Mix halfway through, then add chickpea water to help with consistency.
- Add oats, raisins and cinnamon to mixed dough.
