Marshmallow Rainbow “Cake”

  • 1 yellow hard candy
  • 2 tablespoons superfine sugar
  • 6 purple hard candies, or 3 cups (300 g) prepared purple marshmallows
  • 6 blue hard candies, or 3 cups (300 g) prepared blue marshmallows
  • 6 green hard candies, or 3 cups (300 g) prepared green marshmallows
  • 6 yellow hard candies, or 3 cups (300 g) prepared yellow marshmallows
  • 6 orange hard candies, or 3 cups (300 g) prepared orange marshmallows
  • 6 red hard candies, or 3 cups (300 g) prepared red marshmallows
  • 4 gummies

Prepare

  1. To make marshmallows: Let the machine heat up for 10 minutes before using, then turn off.
  2. Add the yellow hard candies and superfine sugar to the machine and turn it back on. When you see the marshmallow web begin, sandwich a wooden skewer at a 45° angle. Move and rotate the skewer around the bowl while the candy collects at the end, then move the skewer to a horizontal position and continue to rotate to collect the remaining candy, moving from side to side.
  3. Slide the white marshmallows from the skewers into a 6″ (15cm) deep round container and press down lightly. Cover container and refrigerate while making remaining color.
  4. Let the machine heat up again for 5 minutes, then switch off. Add 2-3 purple hard candies in the center, then turn on again, place the marshmallows on a wooden skewer, turn off the machine, and add more candies until the cones are large and fluffy. Add the purple marshmallows to the container with the white marshmallows, cover and refrigerate.
  5. Repeat for blue, green, yellow, orange, and red hard candies, allowing the marshmallow maker to reheat for 5 minutes between batches.
  6. When ready to serve, uncover the container and pour the marshmallow cake onto a plate. Insert 4-6 wooden skewers as “candles” into the cake, then place “flame” fondant on each skewer.
  7. Slice and serve.
