Roasted Tomato Vodka Jam
- 1 lb tomatoes (425 g), stemmed and chopped

- 2 tablespoons Worcestershire sauce

Prepare
- To make Roasted Tomato Vodka Jam: Preheat oven to 375°F (190°C).
- In a large bowl, whisk together tomatoes, onion, serrano, olive oil, and salt. Spread mixture out on a baking sheet and bake until tomatoes start to soften and brown, about 40 minutes.
- In a liquid measuring cup or small bowl, whisk together vodka and horseradish.
- Remove tomatoes from oven, pour in vodka mixture and stir to combine. Return the tomatoes to the oven and continue cooking until the mixture thickens, about 20 minutes. Remove from oven and cool until ready to use. Leave the oven on.
- To make black pepper candied bacon: Line a baking sheet with foil.
- Arrange bacon in a single layer on prepared baking sheet. Transfer to the oven and cook until the bacon strips start to curl around the edges, about 10 minutes.
- In a small bowl, whisk together maple syrup and black pepper.
- Remove bacon from oven and brush with black pepper syrup. Return to oven and continue cooking until bacon starts to crisp, about 15 minutes. Remove from oven and cool until ready to use. Leave the oven on.
- Make Spicy Chicken Burgers: In a large bowl, combine ground chicken, Worcestershire sauce, celery salt, and garlic powder. Mix by hand until fully combined, then divide into 4 equal portions.
- Heat a large frying pan over medium-high heat. When the frying pan is hot, add the olive oil. Press each chicken portion into thin patties by hand and add to skillet, working in batches if desired to avoid overcrowding. Cook until the bottoms of the patties are golden brown and the edges are crisp, about 3 minutes, then flip and cook until the other side is golden brown, about 3 minutes more. Drizzle ÂĽ teaspoon hot sauce over each patty.
- Assemble the burgers: Place the full burger buns on a baking sheet. Brush top of each loaf with beaten egg and top with celery seeds. Transfer to oven and bake until egg wash is golden brown, about 5 minutes.
- Thread 1 corn kernel and 1 cherry onto 4 toothpicks.
- Open the bun, spread 2 tablespoons of tomato sauce on the bottom half, then top with the chicken patties and 2 slices of candied bacon. Place the top bun on top and skewer each burger with a corncob and tomato toothpick. Serve with Bloody Mary.
