simple but impressive

I originally created this recipe a bit “by accident” when I was trying to make cupcakes for girls night. I followed the berry frosting recipe but it was a lot more complicated than I liked so I simplified and made my own version!

The end result is amazing! I spread the frosting on some vanilla cupcakes and topped with fresh berries and they were a huge hit.

Don’t be intimidated by this recipe, it only takes 5 ingredients and a few minutes. But no one will know it based on its effect!

Just puree and mix!

This berry buttercream frosting recipe actually consists of just two steps.

purée. Puree all berries in a food processor or blender. You want it to be as smooth as possible so it mixes nicely with the butter and sugar.

mix. Add butter, powdered sugar, and ½ cup pureed berries to a mixing bowl. Blend until smooth. Add more or less puree depending on the thickness of the frosting you want.

Once it’s all combined it’s time to pipe onto some cupcakes!Note: this will be enough to pipe 24 cupcakes.

More than just vanilla cupcakes: Berry Buttercream Frosting can be used on sugar cookies, chocolate cupcakes, brownies and more!

Frosting Tips

Getting the right frosting consistency can sometimes be tricky, especially when using fresh fruit.here are a few Tips to help you get the perfect frosting every time:

  • Boiling the puree for 10-20 minutes is a good way to remove excess water. Cool before adding icing.
  • Make sure the puree is cold! If the puree is hot then it will separate from the other ingredients and melt the butter.
  • Add only ½ c of puree when whipping frosting. If the frosting is too thin, add a little more powdered sugar. If you find the frosting is too thick, add a bit of leftover puree to get the desired texture.

shop Any leftover berry buttercream frosting will keep 5-7 days in the refrigerator, or freeze Store in an airtight container for 2-3 months.
